Swedish Pancake
This is a thin pancake which you serve rolled, with a blueberry jam or fresh berries and cream. For this recipe we used the Buttermilk Pancake Mix and enjoyed it with some fresh raspberries.
To make the batter mix together 1 Cup plus 2 Tablespoons Sticky Fingers Buttermilk Pancake Mix with 3/4 cup cool water. Mix until fully combined, and allow to sit for 5 minutes while you prepare your pan.
Heat a non-stick pan over medium heat, and melt some butter or oil to coat the bottom of the pan. Add 1/4 cup of batter to the pan, and swirl the batter around the pan to create a thin pancake.
Allow to cook for a few minutes on each side, and if you are serving them rolled you should roll the pancakes while they are warm.
Serve with fresh whipped cream and seasonal berries.
Pannekoek
This is another thin crepe like pancake which is served with cinnamon sugar and fresh lemon juice. The acid from the lemon cuts through the sweetness of the cinnamon sugar to help to balance each bite.
To make the batter mix together 1 Cup plus 2 Tablespoons Sticky Fingers Cinnamon Pancake Mix with 3/4 cup cool water. Mix until fully combined, and allow to sit for 5 minutes while you prepare your pan.
Heat a non-stick pan over medium heat, and melt some butter or oil to coat the bottom of the pan. Add 1/4 cup of batter to the pan, and swirl the batter around the pan to create a thin pancake.
Allow to cook for a few minutes on each side, and roll before serving. Sprinkle with cinnamon sugar, and a fresh squeeze of lemon.
Beghrir
These silver dollar pancakes are very different from the other pancakes on this list, because you only cook them on one side. By cooking on one side you get a crisp underside with a spongey topside that offers a differentiating texture and the perfect vessel to absorb any syrup that you want to enjoy them with.
To make the batter combine 1 Cup plus 2 Tablespoons of Sticky Fingers Blueberry Pancake Mix with 2/3 Cup cool water. Allow the batter to sit for 5-10 minutes before cooking.
Heat a non-stick pan over medium/low heat and melt some butter or oil. Make sure that whatever pan you are using, that you have a lid for it. Once the butter has melted or the oil is warm, that you add small amounts of the batter and cover with a lid. Allow to cook 5-7 minutes on that one side, and serve warm.
Ebelskiver
This pancake resembles a donut hole in its final appearance, but in order to make it you will need a specialized pan. If you do not have the pan you can still make these pancakes but instead of making them into donut holes you can make stuffed pancakes. Equally as delicious just a different appearance.
To make the batter combine 1 Cup plus 2 Tablespoon Chocolate Chip Pancake Mix with 1/2 Cup Cool water. Allow the batter to sit while you prepare your pan.
For either pan you will need to heat it over medium heat, and pre grease. Then drop small amounts of batter onto the warmed pan and pipe Nutella into the center. Then you will cover the visible Nutella with extra pancake mix.
Cook thoroughly, making sure to brown all sides and serve warm.
Crepes
These French-style pancakes can be served with a variety of toppings, but for a traditionalist, you should serve them with a little white sugar and either fold or roll and enjoy.

How do I make the Strawberry or Blueberry Puree?
Add your 1 cup of fruit to either a blender or a food processor and blend until smooth. If you want a vibrant color you should use wild blueberries, as they have a higher pigment. To increase the pigment of the strawberry puree, you can add some beet food coloring. After you blend the puree, you can strain it for an even smoother texture.
